Why when I switch from monitor one to monitor two doesn’t the game save it like any other setting? Getting really irritated that I have to change it every time I open the game.

I’m sorry about this issue you’re describing, this sure seems like it can be pretty annoying 
. Just so i can make sure that i got the information right, the game does not save the target monitor you want to run it in? In that case, the first troubleshooting i would recomment would be to do the following steps and see if they work:
1. Open Steam in Big Picture Mode
2. Go to Settings
3. Go to display
4. Go to resolution
5. In the “target monitor” dropdown menu, choose the desired monitor you wish to run the game in.
Please also see if, after making sure the desired monitor is selected, starting the game from Big Picture Mode Helps. Additionally, if these do not help with the issue, you can ty using the priimary and seconnary y monitor function on Display Settings. I ho this helps!
