How do I set up to only see english only forums so I don’t have to search through other languages when trying to read forums?

Click on General Discussion - this will then show “General Discussion” written in the four main forum languages. Just pick it written in English and it will filter out the other posts unless someone specifically posts in the English section using a different language.
You do the same for each section (e.g. Official News). Pick the subheading written in English and you get English posts.
Under Advanced Search Features, you can also filter to search for topics in English subsections as well (or French/German/Spanish etc)

Yeah the forum UI is not good, I have not seen one arranged this way in a very long time.
Once you choose the language option it should remember it and not show all the other languages unless you tell it to. It seems like the forum is an afterthought using a design layout from a decade ago.
