what is some good solo content in WoW?
I can literally spend my entire Saturday morning gathering fibers / thick hide in MD while I smoke . There is WAY MORE PVE players than pvp players in this game lol ( this actually a good thing but I’m pretty sure a lot would be surprised by that ). I disagree with you saying it’s not beginner / noob friendly , this is def one of the MMO with the least amount of systems ( if they don’t keep adding them ) . Solo content is just fine , what your looking at is a solo player game who take your hand for the entire run through

The only good advice I can give you:
It is to quit smoking! 
Personally, I do find the mob farming aspect of NW to be pretty trash right now, between gear drops being subpar as always, salvaging yielding coins and repair parts 
, and coin from mob drops to be few and far in between. Not sure if you are into mindlessly pulling mob packs and smacking them around, but the Devs did mention changes to salvaging that might make it more worth your while to break down the fodder drops we have been getting since release. I have been sitting on a lot of legendaries since the Mutation patch, so maybe we can hope for some special goodies from them.
And ya, sadly everything right now is about the “wait and see” sprinkled with hopium, but here’s to a good round of April PTR Patch Notes. 
Star Wars galaxies oh my gosh! lol you could literally do so much in that game shame they killed it with the combat update. If they left the core of combat and just added more content it would be going strong.
I miss my Jedi and Teras Kasi / Fencer to solo Krayt Dragons 
Why do you always have to go to a dungeon to find a slightly more subtle game mechanic?

Have you checked out the SWG emulator project? I think they are building it based on pre CU features.
To be fair, PVE has got a lot in previous updates and this is the first weapon drop in a long time for the PVPers. They needed a new expedition.
I am a little bummed they killed the solo chest runs in Myrkgaurd close to the expedition they added.
I would love to see a new thing to gather and farm levels with but I did about 700 hours of gathering. It is time to shot shit.
Lol!! Hilarious! You think it already hasn’t? I’m a solo player and there is TONS to do as a solo player. Just because they don’t hand it to you on a silver platter doesn’t mean it doesn’t exist. Many on here have given you things to do, but that’s not good enough for you. Well, bye then! Move along.

Yeah this game peaks for Solo content while leveling then it peeters out to nothing. Kinda got so used to just farming and doing faction missions till cap. End game content for Solo players is Zero.

Except the OP was asking specifically about solo content and every suggestion bar one was group content.
For an endgame player there isn’t much. First two drops of the new dungeon tend to be the only ones worthwhile. Hatchet/war hammer players should just farm the first encounter.
There are technically only two three quests it appears. Two are quite simply complete the new dungeon. The other is a world tour for the blunderbuss that you’ll replace for a 590+ one at your earliest convenience.
There’s rafflebones and a host of quality of life improvements, but otherwise the game is mostly as is.
Some of the QOL changes are pretty legit though.
