Am I allowed to play in an EU server then switch to a US server. Do I keep all my stuff?

No. At this stage there’s no server switching.
If you wanted to have that character - with the same name - on a US server, you would need to delete it, then make a new character on one of the US servers and give it the same name. And in deleting that character you would lose your stuff.
This is why I can’t understand people “playing” on EU at present when it’s not their home server. There’s absolutely no benefit to it.
There’s benefit to reserving a name, granted. But playing? Nope.

some people are playing to reserve their company names because those are also global. don’t expect them to stick around.
