Haha yup thts what i do too… since im not playing the game… the only way to keep connected is via forum.
Am doing elden ring solo game for now until good new content comes. 
When I do log in, it’s gathering. I go explore, find a new thing, thump some dumb heads. It’s never terribly elaborate, though.
Still, NW facilitates that gameplay.
Gathering in NW is a relaxing thing for me. I am an older gamer. I really like the fishing mechanics. I am one of those “evil” pve casual types. Elden ring is a piss poor console port so I refunded it. I have 600+ hours in but not one 60 level yet (52). I keep experimenting with different builds. Just my .02

Farm, make gold on the market.
Stock up on supplies.
Sneak chests.
Explore the map looking for collision breaches in the Level Design. Leads to some really cool adventures I wish were actual locations.

I hear you, in a similar spot. I just cruise around explore/farm/hunt, trying out different builds. I’m at 60 but still need to finish main quest one of these days. Few hours into Elden Ring, can see putting a ton of hours into it. But still enjoying NW for now, although the stuttering has been very noticeable lately.

Fix anti-cheat. Since some idiot posted here cheat-sites for those muskets, you see an increase in aimbotters. Yes aimbotter (ppl which hitted me 12 times in a row, when i am doing the wierdest movements in history. Its not possible to hit me 12 times in a row without missing. lol
Lucky i have 2K def in Max medium, so they cant 3 triple shot me. But hitting me so manny times without missing, i just impossible.
I’m working on sets of 625 bis pve gear and golding 1-10 of each mutation, since pvp is absolutely dead. I enjoyed pvp a lot but it’s now unbearable, crafting has always been a scam, quests suck, zergs are the worst most boring game activity I’ve ever seen with pushing influence coming in 2nd, and gathering is for bots… so getting them bis ward sets and weapon drops and golding the mutations is literally all that’s left to do in this game as far as I’m concerned.
The funny thing is I got stuck even doing this since I’m pretty sure the Harbinger (AE ward set) gloves and chest dont even drop… at least not in 590+.
Edit: My server is dying again for the 3rd time so I’ll probably be able to do invasions again soon… 
Farming Leviathan for the dang Timekeepers Hand that drops for everyone but me.
OPR until the shutter and/or weapon swapping issues frustrate me to the point that I quit.
Stocking up on mats for the update.
Getting my gypsum each day for 400 shards each. Running some OPR and waiting for my friends to finally get to 600ish so we can run mutations together. They came late and the grind is real. Such a bummer.
Returning back, I been been trying to level up 2nd weapon skill, crafting, harvesting, and doing a lot of dungeon runs. However, the dungeon runs are fail because I can never get any orange loot.

Playing pvp mostly opr, ow, doing dailes for gypsum, doing dungeons, gathering and upgrading 3rd set 
I dont like to play with one class I like to change them really often. As 1 class player I would get bored very fast.
m10s - laz/gen are for speedruns and well dynasty we just do gold and not really bothered attempting speedrun as it’s hard enough as is. Get a decent amount of loot doing this for gold.
Wars - for fun but most of the time it’s not fun. Too much defender side advantage
Rolling/Buying gear - going for BIS or at least extremely close to BIS.
Duels - we have 1v1, 3v3, 5v5 duel tournaments or just for practice

Otherwise strictly doing dungeons with people i know.
And i can afford to do runs free.
